Level of effort required: some slicing and grating
BUY a selection of small rolls?– white, wholewheat and brown?– so
that guests can indulge in smaller portions and try more of what you have on
offer. Anything goes, but here are a few thoughts ranging from posh nosh to
comfort food.
Smoked Salmon and Rocket
A bit pricey but worth it. These look as glamorous as they taste.
Buy the best smoked salmon you can afford and plenty of rocket leaves, and
season with salt and pepper. This sandwich shouldn’t need condiments, just a
little butter on the bread.
The BLT
A classic. Cook streaky bacon in the microwave on a paper plate
with a paper towel on top until crispy (see, there’s no need to put the stove
on). Shred a head of fresh iceberg lettuce and thinly slice very ripe tomatoes.
TIP: To keep the lettuce from wilting put a bowl of ice cubes under
the plate it’s on. Serve with mayonnaise, preferably mixed with some Dijon
mustard to give it zing.
Camembert and Strawberry Jam
Slices of oozing Camembert cheese (leave it out of the fridge so
that it is gooey enough to spread) and chunky strawberry jam make delicious,
slightly posh, sandwiches.
Chicken, walnuts and apple
Buy a ready-cooked chicken and rip it into bits. Crush the walnuts
and grate the apple (granny smith is best for this). Mix the chicken, walnuts
and apple with some double-thick cream until coated and season with salt and
pepper. You can mix the cream with mayonnaise if you prefer.
Egg mayonnaise
B oil the eggs until cooked, dice. Chop up some fresh red chilli
(pips removed) and fresh coriander. Mix the eggs, chilli and coriander with
mayonnaise until lightly coated. Another variation would be to use hummus
instead of mayonnaise.
